Eggplant relish vinaigrette

This is my mother's recipe. It can serve as either an appetizer or a relish.


(several cups)


  1. Bake eggplant until soft.
  2. Grind together the baked eggplant, egg, green pepper and onion.
  3. Add oil, vinegar and seasonings to taste. Chill. Serve cold.


Difficulty: easy.
Time: 20 minutes baking, 5 minutes mixing.
Precision: no need to measure.
