Oatmeal and whole wheat pancakes
I got this recipe from a friend.
As she was relating it to me, we agreed on some modifications.
- 1/2 cup whole wheat flour
- 1 1/2 cups rolled oats
- 1 Tbsp baking powder
- 1 tsp ground cinnamon,
or more to taste
- 1/2 tsp nutmeg,
or more to taste (optional)
- 1 egg,
- 1 Tbsp honey
- 1 Tbsp melted butter
- 1 1/2 cups milk
- 1 apple,
peeled, cored, and shredded,
1/2 cup raisins,
or other fruit (optional)
Combine the dry ingredients in a bowl.
Add the honey, butter, milk and fruit to the egg,
then combine with the dry mixture.
The batter should be fairly thick.
If it seems too thick, add a bit more milk.
Cook on a hot, lightly buttered griddle.
